How to Make Easy Cream of Lima Bean Soup Recipe

If you think you don't like lima beans this soup will very likely change your mind. The large white beans are creamy , delicately sweet and lend themselves well to a hearty satisfying creamy soup.

Top with garnishes like crisp bacon, crispy ham bits, scallion or chives or even croutons.

This recipe is from the 1897 Boston Cooking School cookbook which many of my channel videos are based on.

Recipe:

  • 1 cup dried lima beans (the large white beans)
  • 3 pints cold water
  • 2 thick slices onion
  • 4 slices carrot
  • 1 cup heavy cream or whole milk
  • 4 Tbsp butter
  • 2 Tbsp flour
  • 1 tsp salt or to taste
  • 1.2 tsp pepper

Soak beans overnight in cool water; in the morning drain and add cold water; cook until soft, and rub through a sieve - or in modern times use a blender, stick blender or food processor.

Cut vegetables in small cubes, and cook five minutes in half the butter; remove vegetables, add flour, salt, pepper , and stir into boiling soup. Add cream, reheat, strain, and add remaining butter in small pieces.
