Key limes can be hard to find so I made a version with regular limes which are delicious too!
At the heart of this delectable dessert lies a crucial ingredient: allulose. This naturally occurring sugar substitute not only provides the perfect level of sweetness but also ensures that our cheesecake remains low in net carbs and caramelizes the nut free crust. Coupled with full-fat dairy products, such as cream cheese and sour cream, allulose creates a lusciously smooth and decadent texture that rivals traditional cheesecakes.
If you haven't used allulose before it is about 25% less sweet than sugar so you will need to adjust for your taste. Many people on low carb find overly sweet things no longer appeal to their tastebuds so less sweet may be exactly how you now enjoy your desserts.

Equipment to make keto lime cheesecake
Cheesecake always needs some special baking equipment so let's look at what you will need to get out to make it!

- 8" spring form pan or silicone pan (I am using this 8" air fryer silicone liner)
- electric hand mixer or stand mixer

Keto lime cheesecake ingredients
Crust:
- 3/4 c ground pork rinds or pork panko
- 1/4 c. coconut flour
- 1/4 c. allulose (this browns and gives a caramelized flavor to the crust)
- 1/8 tsp sea salt or redmond's salt
- 1/4 c melted unsalted butter
Prehead oven to 325F. Combine all dry ingredients well then added melted butter. Gently press mixture into baking pan. Bake for 12 minutes. Edges should just start to color slightly but not brown. Set aside while you make filling.
Leave oven on.

Filling:
- 16 ounces cream cheese at room temperature
- 2 large eggs, room temperature
- 1/2 c. sour cream
- 1/2 tsp beef gelatin
- 6 Tbsp Limes (about 3 limes worth)
- zest of 3 limes (about three tablespoons)
- 2 tsp vanilla extract
- 1/2 sweetener or combination of two sweeteners to reach sweetness level you like





Blend filling ingredients til completely smooth. Distribute evenly over crust. Bake 40 minutes. Allow to cool 8 hours or overnight before removing from pan.
