Are you craving a guilt-free low carb keto friendly dessert that tantalizes your taste buds with a burst of tangy and refreshing citrus sweetness? Look no further than this Keto Lime Cheesecake recipe. This heavenly creation combines the zesty flavor of lime with the creamy richness of cheesecake, all while adhering to a low-carb, ketogenic lifestyle.

Key limes can be hard to find so I made a version with regular limes which are delicious too!

At the heart of this delectable dessert lies a crucial ingredient: allulose. This naturally occurring sugar substitute not only provides the perfect level of sweetness but also ensures that our cheesecake remains low in net carbs and caramelizes the nut free crust. Coupled with full-fat dairy products, such as cream cheese and sour cream, allulose creates a lusciously smooth and decadent texture that rivals traditional cheesecakes.

If you haven't used allulose before it is about 25% less sweet than sugar so you will need to adjust for your taste. Many people on low carb find overly sweet things no longer appeal to their tastebuds so less sweet may be exactly how you now enjoy your desserts.

What sets our Keto Lime Cheesecake apart is its nut-free crust (no almond flour). Recognizing the dietary preferences and restrictions of my audience, I've crafted a recipe that excludes nuts without compromising on flavor or texture. Instead, I rely on a combination of pork rinds and coconut flour to create a crumbly, keto-friendly crust that perfectly complements the creamy filling.

Whether you're hosting a dinner party, celebrating a special occasion, or simply treating yourself to a well-deserved dessert, this Keto Lime Cheesecake is sure to impress.
